- 2 cups fresh raspberries
- 1 cup granulated sugar
- 3 tablespoons water
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
In a small saucepan, combine the raspberries, sugar, and water. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture has come to a boil.
Reduce the heat to low and simmer for 5 minutes, or until the raspberries have broken down and the mixture has thickened slightly. Remove from heat and let cool to room temperature.
Preheat your oven to 200°F (95°C). Line a baking sheet with parchment paper.
In a clean, dry bowl, beat the egg whites, cream of tartar, and salt with an electric mixer until stiff peaks form.
Gradually add the cooled raspberry mixture to the egg whites, folding gently with a spatula until fully incorporated.
Drop spoonfuls of the mixture onto the prepared baking sheet, leaving about 2 inches of space between each one.
Bake for 1 1/2 to 2 hours, or until the meringues are dry and crisp on the outside but still slightly soft on the inside.
Remove from the oven and let cool completely on the baking sheet. Serve immediately, or store in an airtight container at room temperature for up to 3 days. Enjoy!
