Cranberry Orange Loaf

  • 2ย cupsย all-purpose flour

  • 1 ยฝย teaspoonsย baking powder

  • ยฝย teaspoonย baking soda

  • ยฝย teaspoonย salt

  • 1ย tablespoonย grated orange zest

  • 1 ยฝย cupsย fresh cranberries

  • ยฝย cupย pecans, coarsely chopped

  • ยผย cupย margarine, softened

  • 1ย cupย white sugar

  • 1ย egg

  • ยพย cupย orange juice


  1. Set the oven to 350 degrees Fahrenheit (175 degrees C). Butter and flour a 9x5-inch loaf pan. Salt, baking soda, baking powder, and flour are all combined in a bowl. Add the pecans, cranberries, and orange zest. Place aside.

  2. Cream margarine, sugar, and egg until combined and smooth in a large bowl. Add orange juice and stir. until slightly wet, beat in flour mixture. Fill prepared pan with liquid.

  3. Bake in a preheated oven for one hour, or until the bread bounces back when lightly touched. Allow to stand for ten minutes before transferring to a wire rack to cool. When totally cooled, wrap in plastic.
