
Roasted Cauliflower Taco

These roasted cauliflower tacos are one of our favorite options for Taco Tuesday! They're finished with a nutty sauce, pickled red cabbage, fresh cilantro and a squeeze of lime for freshness.
Ingredients
Roasted Cauliflower:
- 1 medium head of cauliflower, cut into florets
- 3 tbsp oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic power (optional)
Nut Cilantro Sauce:
- handful cilantro
- 1/2 cup walnuts
- 1/2 cup almonds
- 3 garlic cloves
- 2-3 tbsp olive oil
- Pinch of Salt
Tacos:
- 8-10 Tortillas of choice
- Graniches: Pickles, lime, coriander
Instructions
Cauliflower:
- Preheat the oven to 200C.
- Break the cauliflower in to small florets in a large bowl. Add spices and oil, toss until well coated.
- Spread evenly on baking sheet and roast for 30-35 minutes, rotating the pan and stirring cauliflowers halfway through.
- Remove from oven and let cool.
Nut Coriander Sauce:
- Add the cilantro, nuts, garlic and oil into a blender. Blend until smooth.
- To assemble tacos, start with a warm tortilla, followed by a layer of garlic sour cream or mash avocado, then pickled red cabbage, then cauliflower, then cilantro sauce, then any garnishes.
